Za'atar "frittata"
Running out of ideas for dinner? Frittata may be the answer!
This egg-free version is made with gram flour and in my most humble opinion, it is as tasty as the eggy one.
For this one specifically, I used a special ingredient: za’atar - a blend of herbs, sesame seed and salt which I had bought on my trip to Jordan. I had never thought of such a combination and I must say it's quite unique!

INGREDIENTS:
250g gram flour
500ml water
1 tbsp za’atar
1 tsp oregano
1 tsp black pepper
½ tsp salt
1 finely sliced onion
1 tbsp olive oil + 2 tbsp for cooking
INSTRUCTIONS:
In a bowl, whisk the water together with the flour, then add the rest of the ingredients and mix until well combined. Leave it to rest in the fridge for at least 1 hour, but the longer the better as the gram flour will be easier to digest.
Once it has rested, heat 2 tbsp of olive oil in a saucepan and pour the frittata mixture. Bring it over low heat, cover it with a lid, and cook for about 20 minutes on each side.
I know it’s tempting, but if you leave it to cool before serving, it will taste even better.
