Spiced stir-fried rice

I was speaking to a friend a few days ago and she asked me if I had any good recipes for spiced rice. I realised I made one in Summer and I had totally forgotten to post it.


So here is my zero-waste, spiced stir-fried rice: this recipe is very forgiving as you can use any spices you have, even if these are different from the ones listed below. The same goes for the vegetables: use what you like and that’s in season and of course, you can always add tofu, tempeh or even beans.


INGREDIENTS:

200g steamed basmati rice

200g tofu

1 tsp turmeric

1 tsp cumin seeds

3-4 cardamom pods

1 tsp nutmeg

1 tsp hot paprika

1 tsp black pepper

2 garlic cloves

1 tsp fresh ginger, chopped

Vegetable oil for cooking

2 tbsp soy sauce (or tamari for a GF version)

Fresh parsley

Spring onions



INSTRUCTIONS:

Heat a splash of oil in a pan, then add the fresh ginger and garlic (chopped or grated). Stir-fry for a few minutes then add the rest of the spices.


At this stage add the vegetables, beans or tofu, season with the soy sauce and let everything cook for 10 minutes.


At the very end add the steamed rice and stir well. Serve it warm with fresh parsley, spring onions and sesame seeds. Quick, easy and delicious!
