Stir-fried creamy cabbage
Growing up is all about figuring out why the veggies you didn’t like as a kid are now the ones you love the most.
Whilst looking for an answer to this question, I’ll share with you the recipe for this super quick and creamy cabbage which I am sure will make you change your mind about this vegetable (in case the kid inside of you still doesn’t like it!).

INGREDIENTS:
1 red or green cabbage (small)
2 tbsp tahini
1 tbsp vinegar (rice, apple cider or balsamic)
1 tbsp soy sauce (or tamari for a GF version)
½ tbsp miso (or more soy sauce)
1 tsp maple syrup
1 garlic clove
Sesame oil for cooking
INSTRUCTIONS:
Finely shred or slice the cabbage, place it in a food container, cover with a lid and microwave it for about 3 minutes at maximum power. Alternatively, you can steam the cabbage in a normal pot for about 5 minutes.
In a saucepan, heat a splash of oil with a garlic clove, add the steamed cabbage and stir-fry for a few seconds. Then add the vinaigrette made with tahini, vinegar, soy sauce, miso and maple syrup and stir well.
Serve the cabbage topping it with fresh parsley leaves and sesame seeds.
