Gallo pinto (Nicaraguan fried rice & beans)
This dish brings me back all the way to my days in Nicaragua, where I volunteered for three months in 2018.
Gallo Pinto is Nicaraguan staple and national dish, and despite its misleading name, there is no chicken in it: just stir-fried beans with rice.

INGREDIENTS:
1 white onion
300g kidney beans
200g long-grain rice
Vegetable oil for cooking
Salt to taste
INSTRUCTIONS:
Steam or boil the rice and set aside.
Finely dice the onion and stir-fry it in a pan with a splash of oil, add the cooked beans and keep stir-frying for a few more minutes.
Combine with the cooked rice and stir all together, adding a bit more oil for a crispy texture. Serve with fresh parsley leaves and chili flakes if you like.
