Courgettes sabzi

If you are in the quest for a quick summer meal, here's another one for you: courgettes sabzi.

This dish is originally from India, I came across it whilst looking for inspiration for courgettes-based recipes and wow, It’s so full of flavours and really satisfying!


The recipe is largely inspired by the one of @indianveggiedelight, but I made my own tweaks because I don’t like to stick to recipes.


If you love courgettes and spicy food, this is a must-try!️



INGREDIENTS:

3 courgettes

1 onion

2 fresh chillies

1 knob of fresh ginger

2 garlic cloves

1 tsp cumin seeds

½ tsp turmeric

½ coriander seeds

1 tsp garam masala

A handful of dry curry leaves

Vegetable oil for cooking

Salt to taste

½ lemon, juiced

Coriander to serve



INSTRUCTIONS:

Heat a splash of vegetable oil and toast the cumin seeds in it. Finely dice the garlic, the ginger and the chillies and add these to the pan along with the curry leaves.


After a couple of minutes, dice and add the onion. Cover with a lid and let it sweat over low heat.


Chop up the courgettes, add them to the pan and season with the turmeric and the garam masala.


Cook for about 5 minutes: the courgettes should have a nice bite. At the very end add the lemon juice and give it a stir.


Serve with a sprinkle of fresh coriander and enjoy with basmati rice or chapati.
