Chocolate & persimmon pudding

Two ingredients, two minutes to whip it up and two hours rest to make the most delicious and simplest dessert of all times.


The main ingredient of this recipe is persimmon fruit, one of my favorite winter fruits (I know, I say that for other fruits and vegetables!)

If someone told me that with just two ripe persimmons you could make such a simple, sugar and thickener-free dessert, I wouldn’t believed it!


In other words: try it, cause “The proof of the pudding is in the eating!” (No, no pun intended!)





INGREDIENTS:

2 ripe persimmons

20g cocoa powder

2 tbsp maple syrup (optional, for extra sweetness)






INSTRUCTIONS:

Peel the persimmons and place them in a blender with the cocoa powder and sweetener (if using any). Mix until combined and smooth. Place the mixture into a glass or pudding mould, then leave it in the fridge for at least two hours.


When serving, flip it over on a dish and sprinkle with more cocoa, nuts, coconut or icing sugar.
