Apple crumble
I’ve been buying apples for a month, every week, with the intention of making apple crumble. And guess how it ended? Eating them all each time!
I guess it took me so much time and a bit of procrastination because I wanted to make not only a vegan version, but also gluten-free. It was worth the wait, because this crumble is something unbelievable.

INGREDIENTS for the base:
6 apples (about 1kg)
50g coconut sugar
30g corn starch
1 tsp cinnamon
1 pinch of nutmeg
1 pinch of salt
1 tbsp lemon juice
3 tbsp water
1 tsp vanilla extract
INGREDIENTS for the topping:
100gr almond meal
125g rice flour
75g gluten-free oats
50g chopped walnuts
½ tsp baking powder
70g coconut sugar
1 tsp cinnamon
A pinch of salt
110g rapeseed oil
1 tsp vanilla extract
3 tbsp water
INSTRUCTIONS:
Let’s start by making the base. Peel and cut the apples into big cubes. Combine them with the rest of the ingredients, place them in an ovenproof baking dish and set them aside.
Then mix all the ingredients for the crumble topping. The texture should be pretty crumbly.
Spread the crumbs on top of the apples, then bake at 180°C for 40 minutes. Enjoy warm with a scoop of vegan vanilla ice cream if you are feeling extra indulgent!
