Apple & cauliflower soup
I wanted to write something nice about apples, but words may not be enough to describe such an amazing and versatile fruit.
So I will go straight to the point and talk about today’s recipe: this apple and cauliflower soup with all its light and fresh flavour…
Inspiration came from a BBC Good Food cookbook, but I made my tweaks to the ingredients and cooking methods to make it as healthy and as nourishing as possible.
I then garnished it with some pan-toasted chickpeas to add a really nice bite. Have you ever thought of using apples for a savoury meal?

INGREDIENTS for the soup:
1 medium cauliflower
3 apples
½ garlic clove
Salt to taste
Black pepper to taste
500ml unsweetened soy milk
INGREDIENTS for the topping:
100gr cooked chickpeas
½ garlic clove
1 tsp thyme
½ tsp sweet paprika
Black pepper to taste
Salt to taste
Olive oil for cooking
INSTRUCTIONS:
Peel the apples and cut them into small chunks together with the cauliflower. Place them in a steamer pot and cook for about 15 minutes or until soft.
Place the steamed veggies in a blender, add the rest of the ingredients and blend until smooth. Add more salt or milk according to your taste.
In a pan, stir-fry the spices and garlic. Add the cooked and drained chickpeas, a pinch of salt and cook over high heat until dry and golden-brown.
Serve the soup and garnish with the chickpeas and a drizzle of olive oil.
